More Biscuits, I Say! (This time with Feta & Green Onion)

Can there EVER be enough biscuits in this world? I really, truly don't think so. The following recipe is going to do nothing but perpetuate my addiction. The combinations are endless. I've already done two variations (in three days) and I plan to add to that list very soon.

Here is the most recent variation:

Feta and Green Onion Drop Biscuits


The preparation is dangerously easy. Though, once I run out of buttermilk, I will probably take a break from filling my stomach with these lovely things. Wanna make them?

My first batch, made with crumbled bleu cheese, came from a modification of the recipe found here: The Smitten Kitchen.  After making those, I have taken out a little of the salt and added a little more buttermilk.

The Ingredients:

2 1/4 cups all purpose flour
3 tsps baking powder
2 tsps sugar
3/4 tsp baking soda
1/2 tsp salt
6 Tbs butter, cut into small pieces
3 green onions, finely chopped
1 1/2 cups shaken-up buttermilk
3 Tbs plain Greek yogurt

The Preparation (all in one bowl!):

Combine the first five ingredients in the bowl.


Whisk together to fluff-ify.


Add the cold Butter pieces to the dry ingredients.


Cut in the butter with a pastry cutter until it looks like coarse meal.


Stir in the Green Onions and Feta cheese.


Combine the shaken Buttermilk and the Greek Yogurt in a measuring cup (stir together to break up the yogurt a bit).


Add the wet ingredients to the dry ingredients and stir until just combined. You may need to add a little more liquid to create the dough. I probably could've used even more buttermilk.

Drop scoops of the batter onto a parchment-lined baking sheet about 2 inches apart (I definitely recommend this because, with the bleu cheese versions, there was some major cheese crust-age).


Bake for 14 minutes or until golden brown on the edges.


We turned these into this morning's breakfast by stuffing them with over-easy fried eggs!


What other variations can you think of? Charlie's was tempting: horseradish, cheddar cheese, and bacon. OHMYGOSH.

  2. I didn't grow up eating this way, but having spent a lot of time with Steph's family in Georgia I would suggest biscuits every night at dinner. That's just how people in the south roll...or biscuit.

    1. chopped jalapeños
    2. cream cheese
    3. ground jamón serrano (country ham)

    or:

    1. coarse ground graham crackers
    2. chocolate chips
    3. Jet-puff marshmallows
